focus

I feel like I came completely into focus today. Everything seemed much easier to do and to think about, that is up until 7pm when I was tired again. I got my grading done and authored a dvd and had some meetings. redesigned my class for tomorrow, and made peanut chicken.

I read this a few days ago and keep thinking about the peanut chicken. Where would I find a recipe like the one you use? Is it Thai?

I have very imprecise measurements. It is sort of Thai. I put a bunch of peanut butter with some coconut milk (although I almost never use coconut milk since I don't need the whole can and don't know what to do with the rest, so I substitute regular milk and sweeten it with some honey), then mix in garlic and cummin and soya sauce. Add hot spice (ground chili pepper) if desired. Warm in microwave or on stove to allow you to stir it together. Simmer it with some freshly cooked chicken. Add other junk if you like: peas or whole peanuts (you could use crunchy peanut butter if you want the bits). Serve with rice or rice noodles. Enjoy.
